Blackberry Cookie Dough Cobbler

This is our favorite new cobbler recipe. It is from The Best Recipe cook book and we have only tried it with blackberries but it says you can use it with any fruit you want.


For berries:
3 pints blackberries
1 T cornstarch
1/3 to 1/2 cup sugar
1 t vanilla extract

For the topping:
1/2 c flour
1/4 t baking powder
Pinch Salt
8 T unsalted butter
1/2 c sugar
1 large egg yoke (use whole egg if doubling recipe)
1/4 t vanilla extract

Mix flour , baking powder and salt together in a small bowl and set aside. Beat butter and sugar in medium bowl until light and fluffy. Beat in egg yoke and vanilla until smooth. Stir in dry ingredients until just combined.
Pour Berry mixture into a 9-inch deep dish pie plate. Drop the cookie dough topping by heaping tablespoons evenly over the fruit.
Bake until topping is nicely browned and fruit is bubbly, about 40 minutes. Remove from oven and cool for 10 minutes in the pan before serving.

I did get their closet organized! Feels so good.

I just realized when I found this cute blog that Ian is starting full days of school this year and I will have to send him lunches. I need to make a trip to the Japanese dollar store and load up on bento boxes and accessories. Yes please.

Baby Quilt


Here is the adorable baby blanket I sent out months ago. I'm going to make it some day when I work up the courage to actually do a quilt. I can't really post a link to the pdf so if you want it just email me.

Honey Ginger Chicken Recipe

OK,

so I meant to share this the first time I made it. It is SO GOOD, and so easy. Freshly grated ginger has got to be one of the best ingredients ever.



Ame, I think you know the person who's blog I got this from? From the Y. She's the one who had Cindy in one of her pictures.

Anyway, here's the recipe. The only change I would suggest is cooking the chicken at a much lower temperature, like 375. I tried it at 475 like her recipe says and it burned all the sauce to a crisp, which you're supposed to be able to put on the rice when it's done.

Happy Birthday Ian!

I worked really hard at the lake to get Ian's quilt completely finished, but it just didn't happen. I got the top done, quilted it together, finished the binding, and got one snake head on. The rest of the heads are made but Amy is going to have sew them on for me (sorry Ame). I think it turned out cute though.
